Recipes By Chef May (Iron Chef Thailand) Smoked Gravlax Salmon Salad with Rice Cracker


Ingredients
  • Fresh Salmon Fillet 500 g
  • Sugar 350 g
  • Water 500 g
  • Salt 50 g
  • Orange Zest 50 g
  • Chopped Cilantro 50 g

Dressing
  • Roasted chili paste 1 tbsp
  • Fish sauce 1 tbsp
  • Palm Sugar 2 tbsp
  • Lime Juice 4 tbsp
  • Thinly sliced lemongrass 50 g
  • Thinly sliced shallot 50 g
  • Mint leaves 20 g
  • Deep fried rice crackers 40 pieces
How To
1.Make the syrup to marinade the salmon by combine water, sugar and salt in the pot bring to the boil then let completely cool, soak the fillet in the syrup cover then chill in the fridge at least 5 hours. When ready drained and patted dry, cut into bite size, serves chilled.

2.Make the dressing by whisk together all ingredients till blended, toss the dressing with fresh herbs and Gravlax Salmon. Arrange food nicely into the Food Carrier, Smart Lock II then enjoy the salmon salad with deep fried rice crackers.
