Recipes By Chef May (Iron Chef Thailand) Grilled Chicken Panini Sandwich with Spicy Tamarind Sauce


Ingredients
  • Sandwich Bread 4 slices
  • Sliced Grilled Chicken Breast 200 g
  • Pre-sliced Mozzarella cheese 4 slices
  • Sliced Tomato 8 pieces
  • Rocket salad 50 g
  • Sweet Basil leaves 20 g

Tamarind Sauce
  • Tamarind Puree 125 g
  • Galangal powder 1/2 tsp
  • Kaffir lime powder 1/2 tsp
  • Rice Powder 1/2 tbsp
  • Palm sugar 125 g
  • Fish sauce 75 g
  • Chili powder 1 tbsp
  • Water 50 g
How To
1.To make tamarind sauce, combine all ingredients in the sauce pan. Let simmered over medium heat till thickened. 2.Preheat an oiled grill pan over medium heat. 3.Place cheese on both halves of bread. Add rocket, then tomato, then sweet basil leaves, then chicken, then sauce to bottom piece. Top with top half of bread. Place onto the grill pan cover then grill for 3 minutes per side or until cheese starts to melt.
