Recipes Dessert Green Tea Soy Bean Mousse Parfait

Ingredients
• Egg yolk 3
• Corn flour 20 g
• Sugar 70g
• Soy milk 220ml
• Matcha powder 1 ½ teaspoon
• Hot water 2 tablespoon
• Gelatin 1 sheet
• Cream 200ml

Others
• Red bean paste 100g
• Glutinous rice flour 100g
• Vanilla ice-cream 4-5 scoops
• Jelly powder 1 teaspoon
• Soy bean powder garnish
How To
1. Making the green tea mousse by beat the egg yolk and corn flour then set aside
2. Dissolve green tea powder with small amount of hot water until it is dissolve
3. Soak gelatin in the cold water until the gelatin sheet is soft
4. Bring the sugar and soy milk to boil, after boiled take half and mix to the egg mixture, dissolve it well then bring back to the pan again with another half keep stirring it until boiled and become thick in consistency. Remove the mixture of the pan and transfer in to a bowl then add the green tea mixture into it, mix well. Add gelatin while the mixture is still warm, rest it at room temperature.
5. Whip the cream until get a soft whipped cream texture; add it in to the green tea mixture. Fill it in any type of bowl you like, set it in the fridge.
6. To make a jelly, boil the jelly powder with 1cup of water, pour it in the mold and let it cool. After it is cool, cut it as a cube shape.
7. Making the moji, knead the glutinous flour with small amount of water until you get a texture of quiet stretchy texture. Boiled the moji until it is cooked then stop cooking by put it in the cold water.
8. Serve the parfait by decorate the parfait with, red bean paste, jelly, moji, and a dash of soy bean powder on top
