Ingredients
Hard-boiled eggs 10
Shredded chicken breast ½ cup
Oil 2 tablespoons
Green curry paste 100 g
Coconut milk 1 cup
Palm sugar 1 tablespoon
Fish sauce 2 tablespoons
Potatoes 400 g
Red chili (for garnish)
How To
1. Hard-boil all the eggs by heating both the water and the Eggs simultaneously until the water boils. Then turn down the heat and continue to boil another 7- 8 minutes. Strain the eggs and immediately put them in cold water to Remove the heat, which will prevent the surface of the egg yolk from turning dark. Peel off the eggs, cut all of them in halves, and separate all the yolks from egg white. Set all of them aside.
2. Stir-fry curry paste in oil until fragrant and gradually add coconut milk. Flavor with fish sauce and palm sugar. Remove from the heat and set it aside.
3. Boil or steam potatoes for 30 minutes, or until well cooked. Peel off the potato skin while still hot. Mash and mix thoroughly and smoothly all the potatoes with the stir-fried curry mix and all the egg yolks.
4. Put the mashed potato mix in a pastry bag with your favorite tip. Squeeze and fill the mix in each piece of egg white. Serve with a topping
