Recipes By Att Khunsri Chiang Mai Pork And Tomato Relish


Ingredients
  • 300 grams sour local tomato [northern]
  • 300 grams minced pork with fatty
  • 5 pieces dried long red chillies, de seeded, soaked and drained
  • 2 tablespoons lemon grass, finely shredded
  • 2 teaspoons galangal, finely chopped
  • ¼ cup shallots, finely chopped
  • 2-3 tablespoons fish sauce
  • 1/3 cup oil
  • 1 tablespoons shrimp paste [gapi]
How To
1.First, make the paste : pound chilies with galangal, shallot, shrimp paste to make a coarse puree.

2.Then add into the heat oil in a pan fry until fragrant. Add the ground pork and tomatoes, fry until cooked.

3.Seasoning with fish sauce and palm sugar, moisten with stocked soup.

4.The relish should be quite dry, sour, salty, a little bit spicy and slightly sweet. Eat with raw vegetables.
